It's Vegan! It's Yummy! It's Cashew Sauce!

Fresh from the market beets, zucchini, carrots and mint with kamut and home made cashew sauce.

Cashew sauce is a perfect complement to plant-based meals such as stir-fries and grain bowls. It’s a flavorful way to add protein and is so easy to prepare! To make, pre-soak 2 cups of raw cashews in water for about 2 hours. Drain and rinse the cashews and then put them in a food processor or blender with one or two cloves of garlic, a little salt and 1 ¼ cups water or broth. Blend until smooth, adding more salt or water to taste. There are many adaptations of this recipe, which you can check out here:
