Not Your Average Apple Cake

There are so many recipes for apple cake that you could try a new one everyday. A fiend gave me this one few years ago and it is one of my favorite! Maybe a little bit more complicated to execute, but totally worth the time and effort!


Preparation: 15 minutes Cooking: 40 minutes

INGREDIENTS

Main cake (stage 1)

  • 100g/ 3/4 cup flour

  • 1 Tbs Baking powder

  • 50g/1/4 cup granulated sugar

  • 45g/1/4 cup Milk

  • 40g/3 Tbs unsalted butter

  • 1 egg

  • Pinch of salt

  • 4 sour apples (I like Cortland or Granny Smith

Cream (stage 2)

  • 70g/ 5 Tbs unsaLted butter

  • 70g/2/3 cup granulated sugar

  • 1 egg

INSTRUCTIONS

Stage 1

  1. Preheat oven at 380F

  2. Put all the ingredients from stage 1 (the dough) EXCEPT the apples in a mixer for 10 seconds and transfer to a bowl.

  3. Peal the apples, cut in small pieces and add to the mix and stir well. The apples should be totally coated with the dough.

  4. Poor mixture in a 9 inch cake pan (preferably in a springform) and bake for 20 min.

Stage 2

  1. While it’s cooking, with a stainless steal small or medium bowl add the butter and the sugar over a hot water pot (creating a bain-marie) and whisk for about 5-10 min until the cream is smooth. Then put on the side.

  2. Just before the 20 min cooking time is over, add the egg and whisk the mixture for about 30 sec.

  3. Poor the mixture over the cake when the 20 min cooking is over and bake the cake for an additional 20 min at the same temperature.

Serve at room temperature or cold.
